pumpkin tomato soup

I am a serious pumpkin addict.  During pumpkin season, I rarely let a day go by where I don’t make or consume something with pumpkin in it.  I recently bought a bunch of pie pumpkins for 25 cents a pound so I now have a freezer full of homemade pumpkin puree!

This week, my obsession has been daily homemade pumpkin spice lattes.  Last week, I made a big batch of pumpkin tomato soup and ate it for lunch three days in a row.  I don’t know how to classify this other than as an addiction.  I’m also addicted to staring at this cuteness…

If you live in Colorado Springs, you might have visited a quaint little teahouse called Montague’s.  They serve a pumpkin tomato soup that is one of the best soups I’ve ever tasted.  I’ve tried several times to recreate their soup at home, and I think I’ve finally gotten as close as I’ll ever get.  Here’s how I make it:

Pumpkin Tomato Soup

1 T. butter

1 c. chopped onion

2 large garlic cloves, minced

1 1/2 c. pumpkin puree (fresh or canned)

1 (15 oz) can diced tomatoes

1/4 tsp. dried marjoram OR basil

1/2 tsp. dried thyme

1/2 tsp. paprika

3 c. chicken broth

1 c. half & half

salt and pepper to taste

optional garnish: grated Parmesan, sliced green onions, fresh chopped parsley

Melt butter in a large saucepan over medium heat; add onions and cook (stirring occasionally) until translucent, about 7-8 minutes.  Add garlic and saute two more minutes.  Stir in pumpkin, tomatoes, marjoram, thyme, paprika, and chicken broth.  Heat through.  Puree soup in blender or food processor (in batches if necessary.)  Return to saucepan and add half & half.  Heat through but do not boil.  Season with salt and pepper to taste.  Garnish as desired.

Yield: 3-4 servings

    Yum! I need to get some cooking lessons from you. Plus also, we need to meet at Montague’s sometime. We love that place!

      That would be fun! Does Drew go to Montague’s with you? Eric says he feels out of place there because it’s 99% women. Maybe Drew can convince him that Montague’s is manly! 🙂
