skillet granola

I love making my own granola, but it’s the time factor that often keeps me from getting it done.  I recently came across this recipe for skillet granola (via The Happy Housewife.)  It’s SO easy!  There’s no checking in the oven and stirring every ten minutes; the entire recipe only takes about fifteen minutes from start to finish.

*SKILLET GRANOLA* (adapted from this recipe)

2 T. coconut oil

4 c. rolled oats

1/2 c. butter

1 tsp. vanilla extract

1/4 c. honey

1/3 c. brown sugar

1/8 tsp. salt

2 T. ground flaxseed (optional)

1/2 c. mini chocolate chips (optional)

1/3 c. shredded coconut (optional)

Heat the oil in a large skillet over medium-high heat.  Add oats; cook and stir until lightly browned, about 5-7 minutes.  Push the oats to the side of the pan.

Reduce heat to medium; melt butter in the skillet next to the oats.  Stir the honey, brown sugar and salt into the melted butter.  Stir constantly until bubbly.  Mix the oats into the butter mixture.  Cook and stir another 5 minutes or so.  Mix in flaxseed if desired.  Spread onto a cookie sheet and allow to cool.

When granola has cooled, transfer to an airtight container and stir in chocolate chips and coconut if desired.  (Dried fruit or chopped nuts are tasty mix-ins too!)
