simple watermelon cooler

There are a lot of things I love about summer, and one of them is the abundance of affordable fresh fruit.  We occasionally like to drink smoothies made with whatever fruit we have on hand, and I recently discovered my new favorite fruit for the blender: watermelon!

Whenever I buy a watermelon, I usually cut up the whole thing and store in the fridge whatever we don’t eat right away.  It’s so easy to toss a few cups of the chilled watermelon in the blender for a yummy, refreshing and healthy drink.

*Simple Watermelon Cooler*

5 c. cubed seedless watermelon, chilled (1 – 1.5 lbs)

juice of half a lime

1 T. honey (or sugar)

1/2 c. cold water

mint leaves and lime wedges, optional

In a blender or food processor, combine all ingredients.  Serve over crushed ice; garnish with mint and/or lime wedge.
