easy lemon crumb bars

Spring is here!  Except for today.  The arctic wind is NOT making it feel like spring today…but…

When life hands you ugly lemons…make these easy Lemon Crumb Bars!

(Was that deep or what?!)

(Seriously though, I was afraid these lemons were just no good.  But as it turned out, they yielded the 2/3 cup of lemon juice I needed!  Never underestimate a wrinkly, sad-looking lemon.)

Lemon Crumb Bars

Crumb Crust:

3/4 c. butter, softened (you can substitute part or all of the butter with coconut oil if desired)

1/2. brown sugar

1 3/4 c. flour

1/2 c. quick or rolled oats

1/2 tsp. baking powder

1/4 tsp. salt

Lemon Layer:

5 eggs

1/2 c. flour

1 1/4 c. sugar

2/3 c. lemon juice

1 tsp. vanilla extract

confectioners’ sugar for dusting

Preheat oven to 350 F.  Grease a 13 x 9″ pan.  In a mixing bowl, cream butter and brown sugar.  Stir in flour, oats, baking powder and salt.  (The mixture will be crumbly.)  Press into greased pan and bake for 20 minutes at 350 degrees.

While crust is baking, whisk eggs, flour, sugar, lemon juice and vanilla in another mixing bowl.  When crust is finished baking, pour the egg mixture onto the hot crust.  Bake another 15 minutes at 350 degrees.

 

Cool on wire rack; dust with confectioners’ sugar and cut into squares (or rectangles). 🙂
