cheesy potato patties

Does your family love mashed potatoes as much as mine?  (We do have one exception: Calla gags every time she tried mashed potatoes, but Hudson makes up for her by eating at least two helpings.)  We enjoy our mashed potatoes, but only when they’re fresh.  The leftovers are not quite as appealing…but here’s a delicious way to serve up those day-old mashed potatoes with just a few simple ingredients:

Cheesy Potato Patties

3 c. mashed potatoes

1/2 c. grated cheese (any variety will do)

1 egg, beaten

salt & pepper to taste

1/4 c. chopped green onions (optional)

2 slices cooked bacon, crumbled (optional)

1/4 c. flour

1 T. oil

1 T. butter

Mix together potatoes, cheese, beaten egg, salt & pepper, and green onions and bacon if desired.

Heat oil in skillet over medium heat.  Place flour on a plate.  Wet hands, then shape mixture into patties.  (This recipe makes 8-10 patties.)  Coat patties with flour.

Add butter to skillet just before cooking the patties.  When butter is melted, place patties in skillet and cook 4-5 minutes on each side, or until golden brown.

We like ours served with a little salsa, but they’re yummy plain as well!
