gluten-free buttermilk pancakes

Pamela’s Baking & Pancake Mix is one of my best friends in the kitchen.  We don’t have any gluten allergies but I try to use alternatives to wheat when possible.  I’ve tried some gluten-free mixes that produce a weird-textured result…or simply don’t taste good.  But I’ve used Pamela’s in SO many different foods–even as a coating for fried fish!  I’m always happy with the taste and texture.

I’ve used (and improved on) several of the recipes on the back of the 4-lb bag, and one of my favorites is pancakes.  The recipe on the package is just so-so, but I’ve adapted an Alton Brown recipe to include Pamela’s mix–and it’s a huge hit at our house!

Gluten-Free Buttermilk Pancakes

{Yields appx. 1 1/2 dozen}

2 eggs, lightly beaten

2 c. buttermilk (can be substituted with this: place 2 T. vinegar in a 2-cup measuring cup, then add milk to make 2 cups; allow to sit 5 minutes before using)

3 T. melted butter

1 tsp. vanilla extract

1 T. honey (or sugar)

2 1/3 c. Pamela’s baking mix (or any other gluten-free baking mix, if you prefer)

Preheat griddle to 350 degrees F, or place skillet over medium heat.  Combine beaten eggs, buttermilk, butter, vanilla and honey in a large mixing bowl.  Add baking mix and stir just until combined.

Lightly grease the griddle with the stick of butter.  (I grease it only where I’ll be pouring the batter to minimize burned butter on the unused parts of the griddle.)  Repeat this step after each batch of pancakes.

Ladle approximately 1/4 cup batter for each pancake onto the griddle.

Cook 3-4 minutes or until edges are set; flip and cook another 2-3 minutes.  Serve warm with whatever toppings you’d like.

If you have a family like mine who gobbles these up as quickly as they come off the griddle, you might need to whip up a double batch! 🙂
