pumpkin cream cheese muffins

I really do spend time doing things other than baking.  Really…I know it’s hard to believe from the last several posts. 🙂

I just have one more pumpkin recipe I have to share.  You know those pumpkin cream cheese muffins that Starbucks sells?  I think I’ve only had two of them in my entire life, but those were two very yummy days.  I tried making a version of those muffins.  They turned out a little lighter in texture (which I like) and they’re not quite as cream-cheesy, but I think that’s because they’re just regular size, not the jumbo, calorie-laden Starbucks size.

So here’s what I did:

Pumpkin Cream Cheese Muffins


8 oz cream cheese, softened

1 egg yolk

1 tsp. vanilla extract

1/3 c. sugar


1/4 c. flour

1/4 c. sugar

1/4 tsp. cinnamon

3 T. butter, melted


2 1/2 c. flour

3/4 c. brown sugar

3/4 c. white sugar

2 tsp. baking powder

1 1/2 tsp. cinnamon

1/8 tsp. nutmeg

1/8 tsp. ground ginger

1/8 tsp. cloves

1/2 tsp. salt

2 eggs, beaten

1 1/2 c. pumpkin

1/3 c. vegetable oil (I used melted coconut oil)

2 T. milk

2 tsp. vanilla extract

Combine cream cheese, egg yolk, and vanilla in medium bowl; whisk until most of the lumps are gone.  Stir in sugar; set aside.

In small bowl, combine streusel ingredients and mix until crumbly.  Set aside.

In large bowl, combine flour, sugars, baking powder, spices and salt.  Make a well in the center of the dry ingredients, and add in eggs, pumpkin, oil, milk and vanilla.  Stir until combined (do not overmix!)

Preheat oven to 375.  Grease 18 muffin cups or use paper liners; fill cups halfway with batter.  Make an indentation in the middle of the batter in each cup and add about one tablespoon of the cream cheese mixture.  Place another tablespoon of muffin batter on top of the cream cheese, and sprinkle with 1-2 teaspoons of streusel.  Bake at 375 for 20-25 minutes.

The cream cheese doesn’t stay as a nice little dollop inside the muffin…so it’s sort of a filling and a topping.  Either way, it’s delicious!

This will probably be my last pumpkin recipe for the season.  But I’m not making any promises.

      I’m glad you liked them, Lou! I’ve enjoyed “talking” occasionally with Mary Fran about baby stuff, mostly cloth diapering. She was a big help to me when I first started cloth diapers with my kiddos!
