zucchini-apple bread (and a camera lens)

Sad news (for me anyway).  Little boy #1 dropped our camera a few days ago and messed up the lens.  I thought it was out of his reach, but apparently I was WRONG.  Fortunately, the manual focus still works, but auto focus does not.  Sad.  Does anyone have a Canon Rebel XTi standard lens they want to get rid of?  Just kidding.  Sort of. 😉

Like zucchini!

I made a zucchini-apple bread the other day and it was yummy.  I’d been wanting to make zucchini bread but only had one zucchini, so I added a grated apple and it worked perfectly.  Calla and I just finished off the last two pieces of bread this morning!

Zucchini-Apple Bread

1/2 c. butter, softened

1 c. sugar

2 eggs

1 tsp. vanilla extract

1 medium zucchini, grated (appx. 3/4 cup)

1 medium apple, grated (appx. 3/4 cup)

1/4 c. plain yogurt OR sour cream

2 c. flour

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1/4 tsp. ground cloves


Preheat oven to 350.  Cream butter and sugar in a large bowl.  Add eggs and vanilla and mix well.  Stir in zucchini, apple and yogurt.  Combine all five dry ingredients in a medium bowl; add to creamed mixture and stir until combined.  Pour into greased 9×5″ loaf pan and bake 60-65 minutes.  Let cool in pan 5-10 minutes, then transfer to wire rack to cool completely.

Try not to eat it all in one sitting. 🙂

  1. Oh no! You may want to google it…that’s how I learned how to fix my lens myself after dropping our accidently too. 🙁 Wanna send me a loaf in the mail? Do you think you could express it, since I’d like it warm and crusty? 🙂

    I made zucchini bread last week, too! I had two HUGE zucchinis, so it made five loaves. 🙂 Mmm … maybe I’ll go thaw one.
