pecan pie bars

I put together these easy pecan pie bars for Eric’s birthday party.  They’re super simple if you need a quick and yummy dessert!

Pecan Pie Bars

  • 1 (18 oz) package yellow cake mix
  • 1/4 c. butter, melted
  • 1/4 c. coconut oil
  • 1 egg
  • 1 tsp. vanilla extract
  • 3 eggs, lightly beaten
  • 3/4 c. corn syrup
  • 1/2 cup packed brown sugar
  • 1 1/2 c. chopped pecans

Preheat oven to 350.  Reserve 2/3 cup of cake mix.  Combine remaining cake mix, butter, coconut oil, and egg; mix well.  Spread in greased 9″x13″ pan; bake 15-20 minutes or until golden brown.  Meanwhile, combine 3 eggs, vanilla, corn syrup, brown sugar, and reserved 2/3 cup cake mix; pour over warm cake.  Top with chopped pecans.  Bake 30 minutes.  Cool before serving.
